MIXED-GREENS PARATHA





























The greens vendor is back in our colony! He had disappeared for a couple of months but now back. So i can buy all the fresh stuff and enjoy.

First thing i thought of making was Methi Paratha, then decided to try something different and new.

The mixed green paratha turned out to be more healthy :)
and tasty. I like the blended favours of the greens. I have used equal quantity of methi, dill and spring onions and double the amount of spinach as it has milder flavour and more water.


Mixed greens -- 2-3 cups(chopped Spring onions,Methi(Fenugreek),Palak(Spinach),Dill)

Whole wheat flour -- 2 cups
Chickpea flour(besan) -- 1/2 cup

Cumin powder -- 1/2 teaspoon
Coriander powder -- 1 teaspoon
Turmeric powder -- 1/2 teaspoon
Garam masala powder -- 1/2 teaspoon
Curd -- 1/2 cup (optional)

Oil/Ghee -- 3-4 tablespoons
Salt to taste

Pour in some water (around 1/2 to 3/4 cup)(depending on the water content of the greens you may change the water quantity) to the chopped greens and cook it covered for 5-6 minutes. Turn the heat off and let it cool a bit.

When the cooked greens are still warm add both the flours, powders and curd to make the dough.

Roll it out into thin discs and cook it with oil or ghee until light brown on both sides.

Serve hot.
